Cake and Toppers

The Virtual Cake

I didn’t make a real cake for Go Workout Mom. Recovering from 4th of July Celebrations, we didn’t need extra calories in the house, but this Valentine’s Day Cake from two years ago works well as a Virtual Cake to celebrate:

My cake recipes are not for the dieting fanatic. I use full butter (which in the long run is better than any of the substitutes on the market), shortening (okay, no good value there, but no trans fat either), and sugar and more. So with that being said, here’s a wonderful moist, somewhat healthy cake to enjoy: the Applesauce Spice Cake featured in Better Homes and Garden 2000 New Cook Book.

2 c. All-purpose flour
1 1/2 t. baking powder
1/2 t. baking soda
1 teaspoon ground cinnamon
1/4 t. ground nutmeg
1/4 t. ground cloves
1/4 t. ground ginger
1/4 c. butter, softened
1/4 t. shortening
1 1/2 c. sugar
1/4 t. vanilla
2 eggs
1/4 c. buttermilk
1 c. applesauce

1. Grease and flour a 13x9x2 or 2 8×11/2 round pans. Stir together all dry ingredients and set aside.
2. In large mixing bowl beat butter and shortening with an electric mixer on medium to high speed for 30 seconds. Add sugar and vanilla; beat til well combined. Add eggs, one at a time, beating well after each. Add dry mixture and buttermilk and applesauce alternately to beaten mixture, beating on low speed after each addition just till combined. Pour into prepared pans.
3. Bake at 350 degree oven for 35 to 40 minutes for 13×9 pan or 30 to 35 minutes for round pans or till a wooden toothpick comes out clean. Place cake on a wire rack in pan for ten minutes and then remove from pan to continue cooling on wire rack.

My fave cake would be Chili’s Molten Choc Cake. I only crave chocolate when I’m PMSing, so it’s kinda like a once a month thing :)

As for cake, I’m partially to the store-bought yellow cake with chocolate frosting. Mmmmmmm!!!!

I agree with Betsy! One of our many fav’s here is my Wacky Cake (chocolate) with my Chocolate Velvet Frosting. It’s a cake you mix in the pan that you bake it in. The Frosting is smooth almost like a hot fudge but thicker!

Your lists of toppers are GREAT! You sure put in a heap of time on that (I’m sure some of it was computer generated, but not all of it!).

My favorite cake is tira misu. The kind you get at a hole in the wall family restaurant off the back roads in Tuscany, Italy. MizFit likes it cheap, but when it comes to favorite cake, I’ve got to stick with the ‘spensive stuff. That’s the way THIS mama rolls! :)

My favorites are Guava Chiffon Cake and Haupia Cake. Hauapia is made with coconut milk but way, way better than regular coconut cake! I love these cakes cause they’re light(like angel food cake) and their icings are light and not too sweet(more gelatin like so the cake needs to be refrigerated). I don’t care as much for the dense cakes and heavy icings. Not that I don’t eat those, I eat those alot too but these cakes are special! So usually I just get them once a year on my birthday! And no I don’t bake them, or else I’d be eating them everyday!
